US vs UK fluid ounces
The fluid ounce means different things depending on which side of the Atlantic you're on, and the cup size differs too, so the two systems are doubly incompatible.
US: 1 cup = 8 fl oz = 236.588 mL
UK: 1 cup = 10 fl oz = 284.131 mL
US: 1 fl oz = 29.5735 mL
UK: 1 fl oz = 28.4131 mL
Why are they different?
Both descend from earlier English wine and ale measures that diverged after American independence. The US system was standardised around the wine gallon (231 in³), while the UK reformed around the imperial gallon (277.4 in³) in 1824. The UK cup is now rarely used in recipes (most British cooking uses millilitres or grams), but it still appears in older cookbooks.
